Wow, this has to be one of my favourite recipes of the year. I made this Rice Noodle Salad with Spicy Lemongrass Dressing recipe with glass noodles instead. The dressing is absolutely amazing and you could use it in so many different ways. It reminded me slightly of BBQ sauce, but with so much more flavour.
The tofu was incredibly delicious. We bought deep friend tofu from a Chinese supermarket and it absorbed the sauce perfectly. It's already pressed, so it's like a sponge and soaks up flavours instantly. It was soft, but with the perfect amount of chewiness. The best tofu I've ever eaten.
